Will it work with out connecting to the internet? Also if you had two of them can you connect them to each other and race together? (Lvl.5 sim)

An internet connection is required. This is how we access the cloud-tuning database and automatically optimize all the devices based on what car and track you are driving. 

Yes. It's possible to connect multiple Stage 5's together for a local or online race.
